The Best Sourdough Discard Cracker Recipe
A little BTS of what our Saturdays tend to look like! A little behind the scenes mixed in while the crackers bake. 😄 We typically try to slow down on Saturdays and spend quality time as a family. One thing I’m trying to do more of is bake from scratch. Crackers are so easy to make, especially with sourdough discard!
Sourdough Discard Crackers Recipe
Ingredients

1 cup (400 g) sourdough starter (discard)

1/4 cup (58 g) melted butter

1/2 tsp fine sea salt

3 tsp dried herbs (I like a blend of rosemary, basil, and fennel)

Optional: If you want the crackers to have an orange color to resemble Cheez-Its (mainly for nostalgic reasons—I grew up on these!), add 1/2 tsp turmeric into the dough. Just a note: don’t sprinkle it on top like I did unless you want extremely yellow fingernails. 😅

Instructions
1️⃣ Preheat oven to 325°F (162°C). Line a baking sheet with parchment paper.
2️⃣ In a bowl, mix sourdough discard, melted butter, herbs, and salt until well combined.
3️⃣ Spread the mixture thinly and evenly on the prepared parchment-lined baking sheet. Sprinkle with additional salt if desired.
4️⃣ Bake for 10 minutes, then remove from the oven and score into cracker shapes using a knife or pizza cutter.
5️⃣ Return to the oven and continue baking for 20-50 minutes until golden brown. Check at the 20-minute mark to avoid burning.
6️⃣ Remove from the oven and let cool completely before breaking into pieces. (Confession: I never let them cool completely—I usually eat them while they’re still warm. 🙈)

🌿 Flavor Variations: Customize by adding fresh herbs or grated cheese for extra flavor.
⚠️ Baking Time Tip: Check at 20 minutes to prevent burning, as baking times can vary based on oven temperature and cracker thickness.
📦 Storage: Store in an airtight container for up to one week—though, let’s be real, ours never last that long. To be honest, I’ve never stored them beyond a day! 😂
